Hearty Lentil & Vegetable Soup
One of the simplest ways to lift your fibre is a good pot of lentil soup — and this one is generous with both lentils and vegetables. It is filling, freezer-friendly and gentle on digestion, and a bowl makes a serious dent in the fibre most of us are missing. Serve with wholegrain bread for even more.

Method
- Heat the olive oil in a large pan and soften the onion, carrots and celery for 8 minutes. Add the garlic and cumin and cook for 1 minute.
- Stir in the lentils, tomatoes and stock, bring to the boil, then simmer for 25 to 30 minutes until the lentils are tender.
- Add the kale and cook for a further 3 to 4 minutes until wilted. Season well.
- Blend a little if you prefer a thicker soup, then serve scattered with parsley.
