One-Pan Chickpea, Spinach & Tomato with Baked Eggs
A savoury one-pan supper that helps keep blood sugar steady rather than spiking it: chickpeas and eggs bring fibre and protein, while tomatoes and spinach add colour and bulk. Everything cooks in a single pan, and it works just as well for a weekend brunch as a quick weeknight dinner.
